Sushi Documentaries

みなさん、こんにち.  There are two great documentaries coming concerning Japanese food culture and sustainability.

 

The first is “Sushi: The Global Catch.”  This film  features chefs in Japan and the US, and there are a few interesting trailers to be found on Vimeo. Each are different.

I hope you’ll also consider watching the clip “Apprenticeship” from the film.  It will make you think about what’s on your plate and how much work it took to get it there.  There’s one chef in Houston who was Assistant Executive Chef of Sushiko’s Chef Mamoru Sugiyama.

 

Second is “Jiro Dreams of Sushi”  which is one of the films of the Tribeca Film Festival 2011.  Many Americans and others who esteem real sushi and real craftsmanship hope for the chance to eat here just once.  There are a few clips of Jiro-san around the internet and I have a few of his books in my possession.  A short teaser trailer can be found here.
